No Bake Peanut Butter Oatmeal Cookies

Ingredients

Makes: 24 cookies

1 1/2 cups granulated sugar

1/2 cup butter

1/2 cup whole milk

1 teaspoon pure vanilla extract

3/4 cup crunchy or creamy peanut butter

2 cups quick-cooking oats, uncooked

24 pecan halves, optional but we use and find it just makes the cookies so much better!

Directions

1. Line a cookie sheet with parchment paper.

2. Combine the sugar, butter and milk in a large saucepan on the stove.

3. Bring to a hard boil and boil for one minute stirring so nothing sticks or burns.

4. Remove from the heat and stir in the peanut butter and vanilla until the mixture is very smooth and well combined.

5. Fold in the oats and while it is still warm drop by spoonfuls. Work quickly as it hardens as it cools.

6. Garnish with a pecan half on each while cookies are warm.

7. Texture of these cookies is crumbly.

8. Place into the refrigerator to harden then move into a container with a lid and keep in the refrigerator.

9. Place a row of parchment paper between each row of cookies.
