Chocolate Chip Macadamia Nut Honey Cookies

Ingredients

Makes: 48-52

2 1/2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup butter, at room temperature

1/2 cup honey

1 egg

1/2 cup brown sugar, packed

1 teaspoon pure vanilla extract

2 cups chocolate chips

3/4 cup macadamia nuts, chopped to smaller pieces

Directions

1. Preheat the oven to 350 degrees F.

2. Line 2 baking sheets with parchment paper.

3. This makes a large batch, about 48 cookies so having 2 sheets going will make it go quicker.

4. Combine the flour, baking soda and salt together in a bowl.

5. In a large mixing bowl using an electric mixer, beat the butter until creamy.

6. Add the honey and mix in.

7. Add the egg, brown sugar and vanilla and mix in.

8. Beat until you have incorporated all the ingredients into a creamy mixture.

9. Add the flour mixture, beating in a little at a time.

10. Stir in the macadamia nuts and chocolate chips with a wooden spoon.

Tip: If your mixing bowl is too small transfer the batter to a bigger bowl to stir in the nuts and chocolate chips so you have have a nice big space for stirring in.

11. Spoon the batter on the cookie sheet. We use a cookie scoop which is about a tablespoon in size.

12. You can leave them in a mound, or you can press the mound down with a fork if you like a flatter cookie. We did some both ways.

13. Place into the oven and bake 10-12 minutes. We baked for 12.

14. Remove and let sit a few minutes, then transfer to a cooling rack.

15. Complete the process until you have used all the batter.

16. It took 3 batches for us to make and cook all the cookies.
