There are some recipes that are like a time machine that have the ability to transport the person eating it to another time zone. Grilled cheese sandwiches are like time machines. Being 7 or 8 years old, playing under my favorite family of trees in the yard that backed onto the mountains, hearing the call from my Mother for my brother and I to come in for lunch ... coming out from a cold fall day to the smell of soup and fried bread and cheese. My Mother would cut them into little soldiers so we could easily dip them into the what soup she had prepared. My brother and I, with our hair and clothes smelling of fresh air and a faint scent of pine, would dip these glorious bites of homemade bread and melting marvelous cheese and haggle over who got to eat the most. Sometimes he would win on grounds of being bigger and sometimes I would win from charm and his love for his little sister.

Grandmother's TIPS for Grilled Cheese Sandwich Recipe:

1. Choose or cut the bread slices in a medium thickness so they are not too fat to bite into once piled with goodies inside, but also are fat enough that you get the chewy bread.

2. I like to squish and flatten my grilled cheese down once it is almost ready to serve to really melt the cheese and so the bites are easier to eat.

3. Did you know you can even use mayonnaise as a substitute for the butter on the bread? It's a great alternative if you run out of butter or your butter is too hard to spread on the soft bread.

4. Take your time while you're cooking your grilled cheese sandwich so that the cheese melts nicely in the center while getting the bread nice and golden brown on the outside.

5. You can also dabble in making some gourmet grill cheese sandwiches by adding different ingredients to your sandwiches like tomato or even some spinach.

6. Be mindful of the temperature and cook the sandwiches at a low temperature for a longer time for the best, gooey grilled cheese ever.

7. These are delicious served with Homemade Dill Pickles.

Makes: 1 Sandwich

2 slices of your favorite bread, we used a sourdough rye bread

2 slices your favorite cheese, we used a non-dairy cheddar cheese Earth Island brand (40 grams)

1 teaspoon butter

1 teaspoon olive oil for greasing the pan

Optional idea: tomato slices and/or dill pickles

Directions

1. Grilled cheese are a simple standard easy to make sandwich that are a staple in many homes. Children and teenagers love them and can easily make themselves.

2. Place a skillet on the stove and turn the oven to medium low heat.

3. Butter the outsides of two slices of bread and place the cheese slices between them.

4. Place the sandwich onto the skillet and cover with a lid. Covering will keep it warmer in a more even manner and will help to melt the cheese. Cook on medium low heat.

5. Pay attention while the sandwich is cooking so you do not burn it. Uncover after a couple of minutes and use a flipper to flip over, cover again.

6. Cook until the sandwich is a nice golden brown on both sides, flip as needed to brown both sides to perfection!

7. Remove from the pan and cut into pieces.

8. Best eaten right away while the cheese is ooey gooey good.

Note: Grilled cheese sandwiches can also include tomato slices or dill pickles!

A gooey grilled cheese sandwich is always sure to bring back some great memories. Some variations of grilled cheese have been in existence since ancient times, but the modern version of grilled cheese sandwiches came to be in the 1920s.

Kraft had already created the famous cheese slices and refined a pasteurizing process that would make sure that the cheese wouldn't go bad while it was transported.
