We eat a lot of vegetables and not so much meat so are always looking for interesting ways to present a veggie-dish. This roasted vegetable is a healthy dinner idea that you can make on a regular basis. It's a great way to get a couple of servings of veggies into your day. With potatoes, sweet potato, zucchini, onion and tomato, this easy dinner idea is the perfect side dish or main dish any night of the week. This easy roasted vegetable recipe looks as lovely as it tastes and is a great addition to the table when you have guests over.

Grandmother's Tips:

1. You can easily increase the size of this dish for a larger group by using more veggies in the recipe and a larger baking dish. This is very tasty as a main course or side dish. This casserole is wonderful hot or at room temperature as a take-along for an event.

2. To store fresh thyme, you will want to keep it in the fridge. Wrap the fresh thyme in some plastic or the original clamshell container. When fresh thyme is stored properly, it will retain its freshness and flavor for between one to two weeks. Fresh thyme can be used either whole with the stem, or you can remove the leaves from the stem.

3. If a healthy dinner idea calls for a sprig of thyme, you can use both the leaves and the stem together. When adding a whole sprig of fresh thyme to your recipes, the leaves will usually fall off when the recipe is being cooked, and you can remove the stem before serving. An easy way to remove the fresh leaves from a sprig of thyme is to hold the thyme sprig at the top with one hand, and then pinch the sprig with the other and pull down the stem. The thyme leaves will come off easily because the leaves are so small they require no chopping.

Makes: 4 Servings

3 Tablespoons olive oil, divided

10 -12 sprigs fresh thyme

2 Russet potatoes, peeled

1 sweet potato, peeled

1 medium to small size zucchini

1/2 medium size cooking onion

1 medium size tomato

salt and pepper to taste

Directions

1. Preheat the oven to 400 degrees F.

2. Have ready a 9x9 baking dish.

3. Pour the oil into the bottom of the dish.

4. Put the fresh sprigs of thyme on the oil.

5. Slice the onion into 1/8 inch slices.

6. Prepare the vegetables by peeling the potatoes and sweet potato.

7. Slice the potatoes into 1/8 inch rounds.

8. Cut the zucchini into 1/8 inch rounds.

9. Stand the rounds decoratively in the baking dish. You can arrange them colorfully in any method you like, but keep them in a ‘standing’ position for the visual effect of this dish.

10. When all the veggies are in the baking dish, season with freshly ground pepper and salt and use a pastry brush to ‘paint on’ another tablespoon of olive oil on the top.

11. Place into the preheated oven without any covering and bake for 60 minutes.

12. Remove from the oven and serve. This dish is tasty with sour cream.
