Simple Tomato Mushroom Sauce

My Mother loves to make and eat pasta and yummy homemade pasta sauces. Unless we are cooking for Grandmother's Kitchen, she always cooks without any sort of recipe and so the the final flavors are always creative and slightly different. Tomato sauce recipes are actually a great recipe to get your creative side out in the kitchen. They are hard to mess up and can be either very simple with just some fresh flavorful tomatoes sauteed in some oil and then pureed into a sauce or served as is on some boiled pasta.

5. To store it efficiently you can use ziploc freezer bags and then store them flat so you can stack the sauces on top of each other. Then just put the sauce in some warm while it's still in the bag to defrost it.


Ingredients

Makes: 4 Servings approx. 3/4 cup serving size

1/2 onion, medium sized chopped

2 Tablespoons garlic butter OR regular butter if you don't have garlic butter

12 mushrooms, washed and sliced

40-60 bite sized tomatoes washed and sliced into rounds OR 3-4 regular tomatoes

4 slices of roasted red peppers to garnish - OPTIONAL

1 garlic clove minced (Optional if you are not using garlic butter)

Directions

1. When cooking a savory dish such as this, you can alter the amounts on the ingredients for the amount of people you plan to cook for and unlike baking ingredients amounts do not need to be exact.

2. Start by preparing all the ingredients.

3. Chop the onion into small pieces.

4. If you are not using garlic butter and you would like garlic in the dish, mince one garlic clove.

5. Wash and slice the mushrooms. You can use more or less mushrooms to suit your personal taste.

6. Wash and slice the tiny tomatoes. We used small ones as we had many leftover from the garden and wanted to use them up.

7. We like the texture of the cooked skins on the tomatoes so cooked ours with the skin on.

8. If you don't care for the texture of the skins on your cooked tomatoes we suggest using large tomatoes instead in the

recipe. You would just need to blanch the tomatoes first and peel the skins off.

9. If using large tomatoes, chop into small pieces.

10. Melt the butter in a skillet over medium high heat. Add the onions and sauté until soft. (Add the garlic if you are using that and cook one more minute) Stir while you are cooking.

11. Add the mushrooms and cook a few minutes over medium heat until they are soft and done.

12. Add the tomato and cook about 15 minutes over medium to medium low heat for 15 minutes.

13. Taste and season with salt and pepper to your liking.

14. Serve.

This will add more nutrients to your meal, and spaghetti squash really absorbs the flavors of the sauce making for a delicious meal. To enhance the flavor of the sauce, a great tip is to roast the tomatoes for a bit in the oven which will bring out a sweetness in them.

Also, adding the butter into the sauce helps to enhance the flavor making it richer, it also helps to make it smooth and velvety in texture. Adding a bit of sugar to your homemade spaghetti sauce can also help to enhance the flavor and elevate it as well. You can even make a bigger batch of this sauce and then freeze it in your freezer to bring it out whenever you need it.
