Ingredients
Makes 2 servings
1 zucchini medium sized
1 garlic clove, chopped very small
1 olive oil
1 Tablespoon freshly squeezed lemon
2 Tablespoons water
salt and pepper to taste
1. Wash and dry the zucchini and chop the garlic into small pieces. Squeeze the lemon juice and have ready.
2. Use the spiralizer to make the zucchini noodles. Place them onto paper towels and pat out any moisture.
3. Heat the olive oil in a large skillet, add the garlic and cook for a couple minutes.
4. Add the zucchini noodles and stir into the garlic and oil. Add the lemon juice and the water, gently stir as the noodles are cooking and steam for a couple of minutes. Just cook long enough until you see the noodles are starting to soften. Don't over cook. Add salt and pepper to taste.
5. Serve right away.
